This culinary herb is a perennial native to the Mediterranean region and will grow taller each year. The roots require 3-4 years or so of growth to reach a good size for cultivation and has many uses.
✔ The root can be used raw or used as flavouring, or dried and used for chewing
✔ A tea made from the roots and it is an excellent thirst quencher
✔ The powdered root can also be used as a sweetener in other herb teas

Planting & Harvesting

Sow & Grow

Sow indoors from March to May or September to October, thinly in pots or trays of seed compost; do not cover as light is needed for germination. Keep at a temperature of 5-10oC (41-50oF). Germination can be slow and erratic. When large enough transplant to further trays or pots of compost. Gradually harden off before planting out to final position the following spring spacing 60cm (24in) apart. Protect young plants from frost until established.
Harvest: August to October. Dig up the plant in early autumn, cut part of the roots off and replant the plant, it will continue to grow. Cut the root into 20cm (8in) pieces and dry for later use.
