This imperator type contains a large amount of lycopene (usually found in tomatoes) in place of betacarotene, this turns the colour of the carrot from a light pinky-red to an intense orange-red when cooked with a great flavour and texture. We can vouch for the fact that it is still a great carrot flavour.
