A delicious winter vegetable whose flavour improves with standing, as frost makes the flesh more tender. It produces long white roots similar to parsnip which can be boiled or fried. It has a sweetish mild flavour totally different from any other vegetable and often said similar to oysters!

GROWING INSTRUCTIONS: Sow outdoors April to May, 1.5cm(half inch) deep in rows 30cm(12in) apart in growing position, cover lightly with fine soil. Germination may be slow, keep moist and weed free. Thin as necessary to 20cm (8in) apart, although if sown thinly no thinning is required. Weed carefully disturbing the roots as little as possible.
Harvest: October to March. Leave the roots in the ground until required or store in boxes of dry sand.
